Pinot Noir is a great vine, particularly suitable for sparkling winemaking process. Its production requires the most attentive care of the grapes, of the early maturation stage and during the harvest. All grapes are harvested manually, after a careful selection of the best bunches and brought immediately to the winery in small baskets to protect the grapes. Here is the secret of an excellent sparkling wine: in the winery a classic rose vinification occurs, leaving the skins in contact with the juice for 2 hours without oxygen. Fermentation lasts 12-13 days at 16-18 °C. Re-fermentation occurs in autoclave (Charmat or Martinotti method) with 90 days on the yeasts.
